The Healing Power of Coffee and Family
In 2024, Dad was diagnosed with severe liver scarring. His doctor had some general recommendations: exercise more, lose weight, and so on… But there was one recommendation that would prove to be a major change in my dad’s life: drink more black coffee.
Dad was never really a coffee drinker before that. Coffee was just a rare occasion for him. But he decided to give it a try.
We started by buying some espresso shots from different places around San Antonio. Once it had become a part of our regular schedule, we felt comfortable judging different places and determining what we did and didn’t like. And then we asked: why don’t we do this ourselves?
So after doing countless hours of research (by watching YouTube videos), Dad bought his first espresso machine and grinder. And he never turned back! He went from learning the intricacies of grind settings, to figuring out how to pull the perfect espresso shot, to studying the art of the pour over, to roasting his own coffee from imported green beans.
Our family supported Dad's coffee adventure, helping with cuppings and flavor notes and judging different brews. In April 2025, we attended the 2025 Specialty Coffee Expo in Houston to meet all the coffee celebrities we’d only seen on screen.
After almost two years into this journey, my dad revisited his doctor for some fibrosis scans and labs. And the results pointed to a miracle: my dad’s liver stiffness had gone down to the normal range! We were astounded to find this out... did coffee do all that?
So we really mean it when we say that coffee is something that has changed and saved our lives. And we hope that we can share that love and passion with everyone who gets a taste.
Sincerely,
The Manansala Family
